I would think external cells - skin and all that - would have much faster turnover, brain tissue would be rather slower, and cartilage would hardly be replaced at all....

Brain cells don't come back, at all, but some quick search has shown me that this is nothing but myth. It is a nice one, though - I prefer it to the real small deaths of flesh!
