So then, gf just told me that everyone was asking why she was so upset. She said she told our swim coach, and EVERYONE. Fuck. I just want to cry now... Fuckfuckfuck... This might get to my PARENTS. I have to tell them before that happens, but I'm not ready. All this because of a single ya 5 weeks ago! I'm just going to cry now. This f****** sucks...
I'm really mad now. For one because of what she did, and because she decided to tell me over text, and act like nothing ever happened at swimming. I at least had the stones to go over and tell her in person that I AM GAY. And she told EVERYONE just minutes after, without my consent.

Well...

I think you may have assumed to much here. Once you tell someone, they don't really need your consent to tell someone else. Especially if you don't tell them not to tell anyone else.

Too late to change anything now, and you may have mentioned this before, but... why did you need to tell her you were gay? I understand you wanted to break up with her, but that doesn't mean she had to know the real reason. There are so many teenaged girls who get dumped and don't exactly know why...

As for your parents, again, don't rush into it. If someone tells them, and they ask you about it, tell the truth. But I wouldn't preemptively tell them, since they may never find out. Besides, it's so much easier for them to bring it up and you to confirm it.
